Seared Scallops over Carrot Puree and Spicy Cabbage Salad

Whole Foods was having a deal on scallops so I decided to pair it with carrot puree and spicy cabbage salad, which was so crisp and refreshing. See below for the spicy cabbage salad recipe (with the original recipe link at the bottom).

YIELD: Serves 3 - 4

ACTIVE TIME: 10 minutes

TOTAL TIME: 1 hour

INGREDIENTS

·        1/2 of a large head of cabbage, finely shredded

·        1 small bundle green onions, finely sliced

·        1 bundle radishes, washed and diced

·        1 jalapeno pepper, deveined and seeded, finely minced

·        ½ bundle cilantro, finely minced

·        1/3 cup olive oil

·        1 small lemon, juiced

·        Salt and pepper

DIRECTIONS

1.      Toss all the prepared veggies together in a large bowl

2.      Whip up the olive oil and lemon juice in a cup with ½ teaspoon of sea salt

3.      Drizzle the dressing over the salad and toss until every vegetable is coated

4.      Allow the salad to sit at room temperature for up to an hour for the flavors to meld.

5.      Test for salt and pepper. Make the necessary adjustments
